HI, I'M VERONICA

 

I’m a Registered Holistic Nutritionist, animal lover, and total nerd at heart. I am very lucky to split my time between my home town in Mexico and my partner's home town in New Zealand .

My path to this career is deeply personal, shaped by my own struggles with gut health and a childhood immersed in both medicine and plant-based living.

My mom, a doctor, sparked my early interest in health, while my grandfather, who adopted a whole-food, plant-based diet in his sixties, showed me the power of a plant forward diet.

As a kid, I was lucky to join my grandparents on plant-based retreats, and those early experiences planted the seed for my passion for nutrition.

 

 

WHY I DO WHAT I DO

 

But it wasn’t until my late twenties—when I was diagnosed with Ulcerative Colitis—that I fully realized the transformative role diet and lifestyle play in gut health.

I heard one GI specialist after another say something along the lines of "diet doesn't really matter". 

But I knew that wasn't true. And not a single one ever mentioned the microbiome. 

Determined to take charge of my health, I immersed myself in nutrition science, earning a diploma and specializing in gut health. Along the way, I uncovered how conventional medicine, while invaluable, often overlooks the profound impact of diet on our microbiome.

Today, I combine my personal journey with evidence-based strategies to support women dealing with gut health challenges who feel  dismissed and not fully heard by traditional approaches. 

When I’m not helping clients, I love exploring farmers' markets, creating plant-based recipes, and soaking in the natural beauty of Mexico and New Zealand.
